Countertop Omakase - The Ultimate Ritual
Composed of 20 courses, all preparations are finished live, in front of the customer, at our boat-shaped counter, a tribute to Japanese fishermen and the rare fish we use, found in very few restaurants in Brazil.
Here, each cut, each brushstroke of sauce, and each assembly happens just inches from your eyes. The result is an intimate, theatrical, and profoundly sensory experience, conducted directly by the chef, in the heart of our gastronomic temple. Hōzō Kōan is born from a rigorous curation of ingredients, combining high-quality seafood preserved in a maturation chamber that enhances and improves flavor. We use exclusive soy sauces, special vinegars, and premium rice, served in handcrafted ceramics designed to intensify texture and temperature.
Naturally changeable, the menu transforms daily according to seasonality, the weather, the chef's inspiration, and the freshly arrived ingredients from the sea. Our approach combines the rigor of edomae, influences from modern kaiseki, and precise cutting and cooking techniques, always guided by simplicity and the purity of flavor.

Our Chef
Victor Andrade
At the helm of Hōzō Kōan is Victor Andrade, 26 years old, a native of Inhambupe (BA), one of the great revelations of contemporary Japanese gastronomy. His career was shaped in the main omakase restaurants in Brazil, most notably the legendary Kinoshita, holder of a Michelin star for eight years.
During five years as a sushi chef, Victor directly participated in the restaurant's achievement of five consecutive Michelin star awards, an experience that consolidated his technical rigor and his understanding of high-end Japanese cuisine. He also worked at renowned restaurants such as Aizomê, Dohdoh, Mori Ohta Sushi, and Nasai, developing the balance between precision, aesthetics, and artisanal sensitivity – the triad that defines the true spirit of omakase.
Now, with the opening of Hōzō Kōan, Victor combines technique, philosophy, and creative freedom to present a unique experience in Morro de São Paulo. His training includes expertise in fine fish, jukusei aging techniques, classic cuts such as edomae and hikarimono, as well as experience in kitchens that integrate rusticity, minimalism, and perfection.
